Some destinations show their beauty instantly. Puglia is not one of them. It reveals itself slowly, like a memory returning. The region in the heel of Italy is shaped by sun, sea and centuries of tradition, and it exists in a rhythm entirely its own. Perhaps its geographical poetry is part of the charm. From Puglia’s coast, Croatia and Albania are closer than Milan, a reminder that this land has always been a crossroads of cultures, flavours and histories.
What defines Puglia, however, is its landscape. The region is a museum of centuries-old olive trees, each one twisted, giant, almost human in posture. They produce the golden oil that seeps into every part of local life, from food to skincare to healing rituals. Puglia is a place where nature is not scenery but character, and this becomes unmistakable when you arrive at Canne Bianche Lifestyle & Hotel, a coastal retreat in Torre Canne.
A Hotel With a Heartbeat
Canne Bianche sits on golden sand, just moments from the natural beauty of the Parco Regionale delle Dune Costiere. It opened in 2011 and is owned by the Mangano family, with Gianvito Mangano now leading its evolution. The hotel’s philosophy is simple and powerful. It is meant to feel like a home, a place where guests are welcomed as friends. The promise sounds poetic, but what is extraordinary is that the hotel genuinely delivers it.

The warmth from the staff is immediate. They do not greet you as part of a script. They do so with honesty, softness and a sense of familiarity. Throughout our stay, we felt this sincerity in small gestures. Someone remembered how we liked our morning coffee. A member of staff asked about our plans with genuine interest. Every evening, entertainment accompanied sundown, sometimes singers, sometimes a pianist whose performance felt deeply personal. This human element is what transforms Canne Bianche from a luxury stay into something emotional. We felt it most on the day we checked out, when saying goodbye felt heavier than expected.
Design That Breathes Puglia
The design language at Canne Bianche blends coastal minimalism with earthy texture. The palette is built from the colours outside the window, white and beige and the warm shade of rough earth. Nothing is overworked. Nothing is excessive. Even the lighting fixtures feel poetic.

Chandeliers in the garden are made from oyster shells, swaying gently and producing a soft clinking that mirrors the sound of waves. Typical Apulian ceramics appear throughout the spaces, grounding the aesthetic in place and tradition. It feels entirely fitting that the hotel has now been awarded a Michelin Key for the second year in row.
The atmosphere is calm and tactile. Rooms echo the landscape with soft tones and natural materials. There are 52 rooms and suites, each designed as a continuation of the outdoors rather than an escape from it. Many include furnished balconies or patios with partial sea, hill or garden views, all offering the pleasure of early mornings spent listening to birds while sipping the first coffee of the day. Our room featured a king-size bed and an Italian marble bathroom with a walk-in rain shower. Bright, white and airy, it created an instant sense of ease.

A Culinary Lens on the Region
At the hotel’s main restaurant Autentico, cuisine becomes storytelling. Our first course was the pink prawn dish, one that subverts expectations. Buffalo mozzarella was hidden beneath the prawn carpaccio, a surprising decision that worked beautifully. Edible flowers brought colour, while the Jerusalem artichoke puree grounded the dish and offset the richness of the mozzarella. A touch of caviar sharpened the flavours without overpowering them.
The wine pairing was a local gem, Biocantina Giannattasio Funambolo, a white wine made from red grapes that are hand-pressed to preserve their pale colour and gentle flavour. It is surprisingly mellow and distinctly Puglian. Prosecco followed, because this is Italy, and prosecco is simply part of the vernacular.
Next came the courgette flowers, a dish that triggered nostalgia for a London restaurant we adored but that no longer exists. This version, however, was far more refined. The plate held several interpretations of courgette, each one showcasing a different texture and flavour. The flower filled with ricotta, along with the accompanying sauce, created a combination that was complex yet rooted in simplicity. It reminded us of how remarkable a humble vegetable can be in the hands of the right kitchen.
Dessert transported us to Campania. A Rum Baba arrived with chantilly cream, orange jelly, pastry ice cream and chocolate orange discs. The centre was softly boozy, and the sweetness was restrained enough to allow each element to shine. It was a dessert of balance and elegance.
Food as a Cultural Bridge
Canne Bianche does not simply serve food. It invites guests into its culture of it. The hotel offers live cooking classes where guests learn to prepare panzarotto, the beloved fried pizza dough that resembles a lighter, crispier calzone. There are also dessert classes, such as the one where we learned to make tiramisu. These activities feel warm rather than didactic, joyful rather than performative, and they are included in the stay. This generosity is rare and reflects the hotel’s guiding philosophy of community.
Lunch With a View
For lunch, Giùammare Osteria Contemporanea offers panoramic views of the sea. The menu includes seafood and land dishes, but the highlight here is the freshness. We began with smoked salmon, thick and vibrant in colour, served with cabbage that added brightness and crunch. It was generous, clean in flavour and visually striking.
The following day, we sampled the grilled entrecôte, and on another afternoon, we chose our seabass directly from the display of local fish.
Everything is caught fresh, including octopus and giant king prawns shaped by the warm regional waters. The seabass was grilled simply with olive oil and pepper, then presented by the chef who flaked it delicately at the table. The simplicity was intentional, a reminder that when ingredients are this good, restraint is the greatest technique.

Wine That Rewrites Your Expectations
Our wine tasting became one of the most memorable experiences of the stay. Led by Adriana, an exceptional female sommelier, the tasting challenged everything we knew about wine. Puglian wines have their own identity. They are bold yet nuanced, sunlit yet layered.
We sampled a Negroamaro red from Salento, followed by our new favourite tipple, the D’Araprì Pas Dosé. Crafted by one of Puglia’s historic sparkling houses and made using the elegant Metodo Classico, the same technique as Champagne, it is shaped by local grapes such as Bombino Bianco and Pinot Nero, giving it a depth and character worlds apart from Prosecco and unmistakably rooted in this region.

Later that evening, we embarked on a cocktail journey with a gifted female mixologist, who crafted a bespoke creation using an ingredient we usually avoid, Campari, yet somehow transformed it into something utterly sensational. The drink was made with 30 ml of sweet red vermouth, 30 ml of bitter Campari, 30 ml of Mezcal Blanco, 15 ml of fresh lemon juice, 15 ml of sugar, and a Stillabunt Magic Velvet foamer for a smooth top. The flavour was unexpectedly balanced and refreshing. She named the cocktail after us, a gesture that felt beautifully personal.
A Spa Ritual of Land and Memory
In the spa, we experienced the Orto di Puglia massage. This treatment draws from local tradition, the type of deep tissue massage said to be taught by grandmothers. Olive oil is used throughout, grounding the experience in the region’s most revered ingredient. It felt restorative and rooted in heritage, a connection to the land through the body.

Canne Bianche Lifestyle & Hotel offers much more than beautiful rooms or refined dining. What sets it apart is the emotional depth. The sincerity of the staff, the cultural immersion, the intimate experiences and the sense of being welcomed into a home rather than a hotel stay with you.
